Wooden platters for restaurants and hotels: choosing, care and ordering

How to choose the size and shape of wooden platters for burgers, pizza, sushi, pršut, cheese and rakija, care for them and order larger quantities.

In a restaurant or hotel, a wooden platter carries the dish and adds to the impression it makes. To last, it has to suit the dish in size and shape, and your staff need to know how to look after it.

Our platters have an eco-friendly impregnation that protects the wood from soaking up liquids and makes it easy to look after. The materials we use are approved by the Croatian Institute of Public Health (HZJZ), and our products are impregnated in line with EU standards for serving food. Our references include Barbun, Valamar, Restoran Kula, Bistro Dali and Daniela Veleniki.

Size and shape for each dish

A platter should be large enough that the food does not hang over the edge, yet small enough to fit on the table alongside plates and glasses. Before ordering, measure a typical portion and a table for two.

Burgers

The oval beech burger platter (38 × 23 cm) in our gastronomy range is designed for a burger with a side. Our one-off ash platter is almost the same size (37 × 23 cm). For juicy dishes, choose a platter with a groove, such as the rounded platter with a groove (45 × 25 cm): the rounded recess stops liquid from spilling. The platter with two sauce grooves (40 × 20 cm) suits burgers with a side and tortillas.

Pizza

We make round pizza platters in diameters of 25, 35, 40, 42 and 50 cm. Choose a platter a few centimetres larger than the pizza, so the rim stays free for holding and cutting. For a pizza of around 30 cm, a 35 or 40 cm platter works well, and for larger pizzas and sharing, the 50 cm one.

Sushi

Our maple Sushi boat L (60 × 24 cm) is designed for serving traditional Japanese dishes. Light maple brings out the colours of fish and vegetables, but it also shows stains, so wipe off soy sauce straight after service.

Pršut, charcuterie and cheese

For pršut, the Croatian dry-cured ham, we make ham-shaped platters measuring 38 × 20 and 51 × 27 cm. For charcuterie and cheese platters for larger groups, choose one of the 80 cm XL platters, such as the 80 × 29 cm one. For a smaller portion of cheese, the triangular cheese board S1-O (29 × 21 cm) is enough.

Rakija

Our beech rakija trays are made for 4, 6 or 8 glasses, in lengths of 33, 44 and 54 cm. They are 6 cm wide, so check the base diameter of your glasses before ordering. Glasses are not included in the price.

Everyday care in a professional kitchen

In a restaurant, platters are washed several times a day, so care is part of every service:

  • Hand wash straight after use: lukewarm water, a mild detergent and a soft sponge or brush. Platters do not go in a commercial dishwasher; our product descriptions state: “Not suitable for washing in a dishwasher!”
  • No soaking: do not leave platters in a sink full of water until the end of the shift.
  • Dry upright: wipe them and stand them upright in a rack so that air reaches both sides, away from the oven, the grill and dishwasher steam.
  • Rotation: keep enough platters for each one to dry completely before its next use.
  • Oiling: check the platters once a week, and oil any that look dry or pale with a food-safe board oil.
  • Cutting raw food: cut raw meat and fish on separate chopping boards, not on serving platters.

Can wooden platters go in a commercial dishwasher?

No. Our platters are not suitable for washing in a dishwasher. Wash them by hand with lukewarm water and a mild detergent, wipe them straight away and leave them to dry upright.
